Early shoots can be forced (in the same way as rhubarb) for a delicious spring vegetable, it is a real delicacy. Young leaves can be cooked like kale and the unopened flower heads can be used like a mini broccoli. A profusion of honey scented white flowers appear in summer which attract all kinds of insects. A very beautiful and edible plant. Although found in coastal areas, it will grow successfully in well drained garden soil. Plants can reach 75cm-1m wide and over 1m in height when in flower. Price is for one potted plant, which can be planted out right away. Lily white sea kale has a more delicate flavour and is better for forcing shoots.
