Description
Udo – Aralia cordata is a hardy herbaceous perennial edible plant growing 2m or more and ideal for forest gardens. The young shoots can be eaten in spring and have a lemon-fennel flavour and are foraged in Japan, China and Korea, but have become so popular in Japan that they are now cultivated there. The plants prefer a bit of a shady spot and will grow vigorously each year once established, they will also grow in sunnier conditions as long as the soil remains moist. They die back in the autumn and produce rapid growth again over spring and summer. The first emerging shoots can be forced by placing a bucket over them in spring to give a more tender shoot to eat. Alternatively young stems can be peeled and steeped in a dressing or peeled and lightly cooked before adding to dishes or served as a vegetable tempura. We have found that plants can remain quite small for their first couple of years in the ground, but like many perennials will suddenly surprise you with rampant growth from their third year onwards. Besides being edible, they are beautiful ornamental plants too.
