Cynara cardunculus is a hardy perennial growing to 2 m (6ft) by 1 m (3ft 3in). It is a very architectural plant and its purple flowers are a bee magnet and have a strong perfume. Although you can eat all parts, the best part are the blanched stems in autumn/winter which can be wrapped in fabric or earthed up to tenderise them. They can then be lightly steamed and then used in lots of dishes. A cheesy cardoon gratin is very warming on a cold winter night and has a nice smokey flavour.
