Oca tubers Oxalis tuberosa

Oca tubers from one of our winter harvests. Oca is a high-altitude Andean tuber crop native to South America. Grown in a similar way to potatoes, the production of tubers is triggered by short day length after the autumn equinox and harvesting usually takes place between November – December depending on frosts.
